I'm a legitimate oatmeal cookie monster... I just counted, and as of January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you ever tried any of these yet? (? Healthy Banana Oatmeal Raisin Cookies

Yields: 15 cookies

These oatmeal biscuits are soft, chewy, and full of banana flavor! The familiar comfy spices and plump raisins make them even more irresistible. They'll keep for a minumum of one week if kept in an airtight container in the refrigerator--if they last long!

1 cup (100g) instant oats (gluten-free if necessary and measured like that )

3/4 cup (90g) whole wheat or gluten-free* flour (quantified like this)

1 1/2 tsp baking powder

1 1/2 tsp ground cinnamon

1/4 teaspoon salt

2 tbsp (28g) unsalted butter or olive oil, melted and cooled slightly

1/4 cup (63g) mashed banana

1 teaspoon vanilla extract

1/2 cup (120mL) pure maple syrup

1/4 cup (40g) raisins

In a medium bowl, whisk together the yogurt, pasta, baking powder, cinnamon, and salt. Stir in the maple syrup. Add the flour mixture, stirring only until incorporated. Fold in the raisins.

Preheat the oven to 325°F, plus a baking sheet with a silicone baking mat or parchment paper.

With a spoon and spatula, dip the cookie dough into 15 rounded scoops on the sheet, and apply to the desired thickness and width using 30 Vegan Cookie Recipes Without Margarine or Egg Replacers a spatula. Bake in 325°F for about 10-12 minutes.
